Beef and Potato Burritos

Short and simple but it does take a little time in the oven.  I made mine smothered with pork red chili.  I would add sour cream or ranch dressing next time but they turned out very well.

Start with:
2 Medium potatoes washed and cubed
1lb Ground beef
1 Small onion diced
1 tsp salt
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1 tbsp tomato sauce
1/2 tsp cornstarch mixed with 1 tsp water
Oil
Tortillas, cheese, chile, etc.

Wash the cubed potatoes to get rid of some of the starch then leave soaking in cold water while the oven heats. Then toss the potatoes in oil or spray with Pam.
Place the potatoes on a greased baking sheet in the oven at 450 degrees for 20-30min.
Heat 1 tsp oil in a sauce pan on the stove, add the onion and cook for 3-5 minutes until the onion starts to soften.  Add the ground beef and cook until it starts to brown then drain.  Add the spices and the tomato sauce and cook until the beef is cooked through and the liquid is reduced.  Stir in the cornstarch mixture and boil for 2-3 min.  Remove from heat.

Toss the potatoes with a little salt and pepper.  Add beef mixture and potatoes to tortillas, add toppings, roll, smother and serve.
